"Rainbow Swirl Cookies"
Ingredients:
- 2 and 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, room temperature
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 4 different food colorings (red, yellow, blue, green)
- 1 cup rainbow sprinkles
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Divide the dough into 4 equal parts and add a different food coloring to each part. Mix until each part is evenly colored.
- Using a cookie scoop or spoon, make balls of dough with each of the 4 different colored doughs.
- Place the balls of dough next to each other on the prepared baking sheet, and then swirl them together with a toothpick or knife.
- Sprinkle rainbow sprinkles over the top of each cookie.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
