Rainbow Swirl Cookies

 

"Rainbow Swirl Cookies"

Ingredients:

  • 2 and 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, room temperature
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 4 different food colorings (red, yellow, blue, green)
  • 1 cup rainbow sprinkles

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Divide the dough into 4 equal parts and add a different food coloring to each part. Mix until each part is evenly colored.
  7. Using a cookie scoop or spoon, make balls of dough with each of the 4 different colored doughs.
  8. Place the balls of dough next to each other on the prepared baking sheet, and then swirl them together with a toothpick or knife.
  9. Sprinkle rainbow sprinkles over the top of each cookie.
  10. Bake for 10-12 minutes, or until the edges are golden brown.
  11. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
